It might seem strange when you see baking soda is included in a candy recipe like brittle, but it plays a very important role. The baking soda reacts with the other ingredients to create a foam of tiny air bubbles. Once the candy cools, the trapped air bubbles provides a softer texture, so you’re not biting into really hard candy.
After recently finishing a semester at ACAD, I thought I would share some of the non-motorcycle work I completed over the past 4 months. This is a hand forged cleaver I made out of a Damascus blank. Kind of based off the traditional American cleaver (I worked in a butcher shop when I was younger) but follows my own lines. Cleavers have always been a favorite style of knife for me, but this is the first time I’ve ever jumped in and made my own.
